He joined Michael Beltrán on Pan Con Podcast to talk about his career in journalism, why his work made more of an impact when he started writing about food, covering the restaurant industry through the COVID-19 pandemic, defining “sandwich” (a recurring topic on this podcast of late) and food journalism ethics. Carlos, Mike and Nick Jiménez also discuss race and cultural appropriation in the context of restaurant branding and whether Los Chinos, a Chinese concept opening soon in Miami, is employing racist marketing and using “race as a costume” with its Instagram content.

In the Patreon-only extended cut of this episode, Mike has five extra questions to Carlos.
